Im looking for someone who knows a lot about 318s, and can help me run the right carb

What have you done to the engine?

Stock manifolds? Headers? Dual exhaust?

You have the stock cam?

I just got through putting a 200 dollar used 318 in my Dart which had been stored for years, and has 20-40K on it. The inside of the engine was clean as can be

I have headers, a "little" mechanical cam about the same as a 340 stock cam, Edlebrock performer, and 600-650 Edelbrock. With 3.89 gears and big rear tires (3500 or so at 65) it is about what I'd expect and is fun to drive. With a 727 and stock old converter, it IS a tiny bit doggy out of the hole, but this ain't a drag racer.

For the moment, I would not change a thing on mine.

Give a little more detail on what you have, body, trans, gears, and what are you looking to do? Money is always relavent to speed so what kind of budget are you working with?
