I may be putting a set of 71 340 heads on my 75 360. I am wondering what the compression will be, or if it will change.

71 340 heads have a factory CC range of 63-73CC's. 1975 360 heads have a cc range of 65-73CC's. Of all the heads Ive ever checked and heard of being checked the actual cc is more on the higher end of the range. If i had to guess your compression would stay the same, might even go lower. The reason it could go lower is that the aftermarket head gasket that you would need is probably thicker than the one you will take off. If you plan on swapping heads, have those 340 heads milled .040-.050 You lower the volume 1 cc per .005 taken off the head. Oh yeah dont forget to add hardened exhaust seats to those heads....you'll need 'um for the unleaded gas. You might try late model 88-91 360 heads. they already have the hardened seats, lower chamber volume around 65 and swirl port technology. The best thing is they're littering the junk yards in the form of dodge vans. They probably can be had for like 50 a pair!
