My 92 Dakota Club Cab 318/auto will sometimes die when the accelerator is released, but only if the A/C compressor is on. Anyone have an idea why?

Is the throttle body clean? Is the vehicle speed sensor working?
Just some of the common things.

AIS MOTOR, though you may get away with cleaning it. Be sure to remove it from the throttle body and clean the pintle on it as well as the bore.
