Default 308's vs 302's on a 390 Stroker

I'm pondering doing a 318/390 stroker motor for my 1987 Gran Fury. With the weight, I need bottom end torque more so than top end. I've heard good things about both the 302's and the 308's, so I'm wondering which head combination (not ported) would be better:

308's with 2.02/1.60 valves,
308's with 1.88/1.60 valves

or

302's with 1.88/1.60 valves

Planned specs/usage:

Street cruiser/sleeper - not all out racing
Mopar 4" crank
Diamond pistons (looking for around 9:1 compression)
Hughes HER0814AL roller cam with 208/214 Duration @.050" and .480"/.489" lift
3.55:1 gears
Cop car or Edelbrock performer intake
750 carb

The exhaust will be the bottleneck, but I need to have a stock looking exhaust system to keep the emissions folks happy until 2007, when I can get historic tags:

Cast iron 360 or 340HP exhaust manifolds, tied to a Flowmaster 2 1/4" X 3" Y-collector, 3" H-flow Cat, 3" Flowmaster muffler and a 3" tailpipe

Thanks - RR

I would use the newer magnum heads but you can't use a roller cam with it.
