Question stall convertor???

how much stall should i use on my truck?
it is a 318 w/ a 727 trans 3400lbs and is going to be used as a street/strip truck. with only about 50 miles a month on the street or less. also i am using mp's six pack intake(p4529054) i am using mp's cam as well (p4120655) with a .557/.557 lift. mp's 360 hp heads with 1.88/1.60 valves and 1.5 rockers. any ideas?
