Default mechanical temp gauges?

I just tested my t-stat in a pan on the stove with a microprocesser thermometer,it started opening before 180*(it's a mr. Gasket high flow 180*) and was open completely at 180*.put it in the car the water in the radiator did not start to flow till the temp was near 195*.I'm thinking part of my ,running hot problem is the temp gauge(auto-meter electrical water temp gauge)is not correct anyone have this problem.
I have a auto-meter mechanical water temp gauge coming tomorrow.
People on this board have told me that with the set up I now have I should not have ,running hot problems, it has not overheated yet ( I haven't been out of the driveway yet,just idling,).Don't want to go to the track till I'm convinced that it will not overheat.
How is the install with the mechanicl temp gauge?

The gauge will / should come with the instructions, but you will run a capillary line from the engine back to the gauge, be sure and not kink the tube
