Default Milling, CCs...

With closed chamber heads, how much milling per CC? I need to take the stock 78CC down to 73CC

But, woah woah woah. According to that link, big block chrysler heads, CLOSED CHAMBER, the chamber volume is between 66.5cc & 73.5cc STOCK. Is this right?!?!

The chamber volume can vary by quite a bit, I believe those are NHRA Stock/Super Stock volumes, though I couldnt get the link to load for me, so I won't swear to it.
When you CC the typical run of the mill stock head, combustion chamber volumes are usually larger than spec. Other things that can affect chamber volume besides head casting deck thickness include valve lip thickness, valve seat recession and casting variances from chamber to chamber.
I used to work in a cylinder head shop and it wasnt unusual when you did repair work on a used racing head, you may find your chamber was then too small and illegal. So you had to adjust or modify to get things back to spec again.
Just grinding the valve a bit can increase volume by a cc or 2, especially on a fairly large intake valve with a thick edge. while installing new valves can reduce open chamber volume by a measureable amount as well.
