Default 360/408 stroker motor for towing?

I need to redo the engine in my Dodge conversion van and I have been looking into going with a stroker crank in the 360.

This is primarily a tow rig and I am looking for a bit more get up and go up the hill here in the Pacific North West.

Any comments or suggestions?

Right now the plan is to bore and stroke it to 408, proper torque cam, Performer intake and exhaust that will flow better.

The boat and trailer that I tow total out to about 4500 lbs.
